Meet Ruby Elbert

Ruby Elbert came to Kelly's Kitchen as a Food Security Network Contributor. It didn't take long for everyone to notice what she brought to the table. She's now Director of Plant One More — a promotion that surprised no one who's worked with her.

Plant One More is built on a simple, powerful idea: if everyone who gardens grows one extra row or crop, that extra food can go to people who need it. Ruby runs the program that's making that idea real in communities across the country.

She studied Disability Studies, Spanish, and Mathematics at the University of Illinois and is deeply committed to making sure disability is part of every conversation about diversity and inclusion. She's worked on disability rights in legal, legislative, and advocacy settings and thinks creatively about access and opportunity in ways that stick.

Ruby is also an adaptive athlete and food lover who enjoys reading, baking, and making playlists. Honestly, she sounds like excellent company.
