Ingredients

1 Cup Peach Preserves (Apricot or Apple will also work)

3 Cloves Garlic

3 Tablespoons Olive Oil

1 Tablespoon Soy Sauce

2 Teaspoons Dijon Mustard

2 Large Bone-In Chicken Breasts

Hot Sauce

Directions

Glaze

Mix peach preserves, garlic, 2 T olive oil, soy sauce, dijon mustard and hot sauce into a medium sized bowl.

Whisk/blend until well incorporated


Preaheat oven to 350 F


Brush chicken with 1 T olive oil, salt and pepper

Using a grill or grill pan - cook chicken skin side down for 6 to 8 minutes or until brown.

Turn chicken over.

Brush 1/3 of glaze to the skin side of the chicken.

Cook for 5 to 6 minutes.

Turn chicken over.

Brush 1/3 of glaze to the under side of the chicken.


Remove the chicken from grill/grill pan to an oven safe dish.

Brush remaining glaze on skin side of chicken.

Cook for 30 to 40 minutes.

Allow to rest for 5  to 10 minutes.

Transfer to platter/plate.
