Crab Stuffed Flounder Filets

We live along the coast of SC where fish and other seafood is fresh and local year round. Crab Stuffed Flounder is a local favorite that you'll find on the menu in most restaurants from dives to fives. This recipe is our favorite. It's also versatile, the ingredients can be substituted or adjusted to your taste.
Ingredients
Crab Stuffing
1/4 lb Lump Crab Meat
2 Tablespoons Butter
1/2 Onion (I prefer sweet onion)
1 Stalk Celery
3 Cloves Garlic
1/2 Bell Pepper
1 teaspoon All Purpose Seasoning Salt
4 Tablespoons Italian Seasoned Bread Crumbs
Fish
2 Large Flounder Filets
2 Tablespoons Butter
3 Cloves Butter
Sea Salt to taste
Black Pepper to taste
Lemon for garnish and finishing
Directions
Preheat oven to 400 F
Stuffing
Melt butter over medium heat
Add finely chopped onion, celery, bell pepper and garlic
Saute for 3 to 4 minutes, just enough to wilt the vegetables
Combine vegetables with other ingredients
Stir to combine and break down crab meat to small pieces
Fish
Wash each filet and pat dry with paper towels
Melt butter over medium heat
Add finely minced garlic, salt and pepper
Saute for 3 to 4 minutes
Place larger filet on a parchment paper lined baking sheet
Drizzle 1/2 of butter mixture over entire filet
Add stuffing to the top of the filet
Place second filet on top of stuffing
Drizzle remaining garlic butter
Place the pan in the oven and bake for 20 to 25 minutes. Do not over cook. Check progress with thermometer at 20 minutes. When internal temperature is 160 F remove from oven and let rest for 5 minutes before serving.
